TikTok Viral Biscoff Cookie with 3 Ingredients (Recipe Review)

I have been obsessed with Biscoff cookies for as long as I can remember. When I was younger, I managed to collect at least three packets per plane ride (two from the flight attendants, one from my father), and I ate all six cookies before my sisters even started their first. I love the crunch, shape and signature spiced brown sugar taste, now reinvented in the popular Biscoff Biscuit Butter Spread.

Until recently, I resisted the urge to buy the spread knowing that once I opened the pot I wouldn’t be able to close it. (Plus, it’s kind of fun to save my Biscoff moments for plane rides). But that all changed when I came across this popular one Biscoff cookie recipe with 3 ingredients posted by Stephanie Kim (aka stephaniekimchi) on TikTok.

In Stephanie’s video, she makes tiny thumbprint-like cookies from just three ingredients: Biscoff pasta, all-purpose flour, and milk. And as if this wasn’t intriguing enough, she bakes them in her airfryer. Given my love for both Biscoff cookies and my air fryer, i knew i had to try them. Here’s my honest review.

How to make the TikTok viral cookies with 3 ingredients

Stephanie’s video doesn’t have much detail, but I was able to fill in the gaps. You start by combining 65 grams of cookie butter (if you don’t have scales, this is about 1/4 cup) with 40 grams of all-purpose flour (about 1/3 cup) and 2 tablespoons of whole milk. Use a rubber spatula (and a fair amount of force) to stir the ingredients together until there are no more streaks of flour.

The next step is to roll the dough into balls. Her cookies looked quite small, so I only collected two teaspoons of dough per ball, leaving me with 11 balls in total. Then I used a 1/4 teaspoon measuring spoon to make a mark in the center of each spoon.

Stephanie bakes her cookies on a rack in her air fryer, but mine only has a basket. After reviewing these air fryer chocolate chip cookies, I decided to preheat my air fryer for five minutes (her recipe calls for 320°F; the closest mine is 325°F), and line the basket with parchment paper. Arrange the cookies in a single layer and air bake until lightly browned and firm to the touch, about 10 minutes.

While the cookies are baking, put some more Biscoff spread in a bowl. Heat it in the microwave in 10 second increments until loose enough to drizzle. Then transfer it to a piping bag or a zippered plastic bag with the corner clipped. Fill the wells of each baked cookie with the warm spread and dig in!

My honest review of the TikTok Viral Biscoff Cookies with 3 ingredients

I expected these to be good (how could they not be?!) But I didn’t expect them to be this one good. Between the soft and chewy cookie and the melty spread instead, every bite was packed with my favorite flavor in the world. I was afraid they would lose their appeal as they cooled down, but I was wrong: they tasted great for a few days afterwards.

Even though you’re essentially making a cookie out of a cookie, the bite-sized thumbprints taste completely different from classic Biscoffs. Moreover, they serve a different purpose. If you’re craving a warm, freshly baked cookie but don’t feel like going to the store, fussing over a long recipe, or even turning on the oven, these will definitely hit the spot. In that sense they are a kind of mug cake!

These cookies are also great for last-minute guests, or to take to parties or potlucks. I took them to a movie night a few hours after I baked them, and they were devoured before we turned on the TV.
