Shredded Chicken Tacos

If you’re looking for a quick and easy dinner, you’ve found the right recipe! These tacos are flavorful, filling and will please the whole family. The best part is that they are so easy to make and really delicious. I love a good street taco. They are one of the things I always crave. If you like tacos, you will love this recipe. It’s so fast and packed with flavors.

As you know, tacos are so versatile and can have any filling you want. I love to take leftovers and make tacos out of them. You can use chicken you made for another meal, or you can use one of the recipes I’ve included. Homemade salsa is always a hit, or you can get it from the store. As a garnish you can add cheese, lettuce, tomato or your favorite herbs. A dollop of sour cream and a little cilantro on top is always a good idea. You can even make your own guacamole if you really want to impress your guests. Make this recipe your own!

Ingredients

These shredded chicken tacos are made from simple, fresh ingredients. You can add any toppings you like, this list is just the basics you need for this recipe. I love to top it with fresh pico de gallo and cheddar cheese, then top it off with lemon juice!

  • Boneless chicken breasts: I’ve included 4 ways you can cook the chicken for this recipe, they’re all linked in the recipe card!
  • Olive oil: Olive oil is what I prefer to cook with, but you can use any oil you like.
  • Garlic powder: Garlic has so much flavor that you’ll want to add minced garlic to this chicken.
  • Onion powder: Onion powder adds a sweet and savory flavor that you can’t get from fresh onions. I love using it in this recipe!
  • Chili powder: This spice adds a bit of spice to the chicken, similar to pepper, and really rounds out the flavors.
  • Ground Cumin: This seasoning is rich, hearty and warm. That’s what you want in this recipe!
  • Kosher salt: A higher quality salt will make a difference in the taste. You could use sea salt if you don’t have kosher on hand.
  • Thick Salsa or Salsa Verde: To speed up this recipe, you can buy salsa at the store, or follow one of the recipes I’ve linked here for a fresh and flavorful salsa.
  • Chicken bouillon: Chicken stock is a great way to add moisture and flavor at the same time.
  • Flour tortillas: My family and I prefer flour tortillas, but you can definitely use corn tortillas if you like them better for tacos.
  • Lime: You want fresh lime juice, so be sure to get a lime when you’re at the store.

These shredded chicken tacos are so easy to whip up when you’re in a rush. Especially if you cook the chicken in the instant pot or buy a rotisserie chicken from the store. I can’t get enough of these tacos, and my family loves them too!

  1. Cooking chicken: I’ve included 4 ways you can cook the chicken linked in the recipe box or tip box below.
  2. Fried Garlic: Heat the olive oil in a large frying pan. Then add the garlic and fry for 30 seconds.
  3. Cooking herbs: Then add the shredded chicken, onion powder, cumin, chili powder and salt. Cook for 1 more minute.
  4. Stir: Stir the salsa, chicken stock and juice of a lime into the chicken mixture.
  5. hot: Stir and heat for about 5 minutes.
  6. Season: Season with additional salt if desired.
  7. Enjoying: Serve in warm tortillas with your favorite toppings and enjoy!

How to cook the chicken?

I didn’t always like cooking chicken, but I’ve found some really easy and fun ways to cook it that made me change my mind. I will share 3 ways you can cook your chicken at home to shred, and one way you don’t have to worry about cooking the chicken. They will all work perfectly in these shredded chicken tacos.

  • Boiled chicken: This method is super easy and keeps the chicken moist. It shreds so easily and is still flavorful and tender.
  • Instant Pot Shredded Chicken: This recipe is so easy, you just put it in the jar and forget it! It’s flavorful, juicy and a great way to cook chicken quickly.
  • Instant Pot Frozen Chicken: If you have chicken in your freezer, this recipe is for you! It only takes 12 minutes to cook frozen chicken breasts in the instant pan, so it’s a great recipe for busy nights.
  • Rotisserie Chicken: If you’re already on your way to the store, you can pick up a rotisserie chicken from the store. Your local grocery store should have hot and fresh chicken that is easy to shred.

Storing leftover tacos

Shredded chicken tacos are great leftovers! You can also make great tacos from leftovers, so they just might be the perfect food! If you have leftover tacos, here are some tips for preserving them.

  • In the fridge: It’s easiest to store all your taco fillings separately. So keep your chicken in a airtight container it can be stored in the refrigerator for up to 5 days. You can store your salsa in a separate container in the refrigerator and should last a week. If you made tortillas from scratch, you can store them in a ziploc bag in the refrigerator for up to 3 days.
  • On the counter: Store your tortillas covered or in an airtight container on the counter. If store bought they should last a few weeks, make sure to follow the directions on the bag.
